  • It Bridges Two Worlds Growing up Mexican American means living in the beautiful space between two cultures. I love traditional flavors, but I also love seasonal American staples like pumpkin spice. Blending the nostalgic, comforting warmth of a traditional arroz con leche with the iconic flavors of fall is a natural extension of the bicultural experience.
  • Upgrades a Childhood Comfort Food For me, arroz con leche is pure nostalgia. It’s the smell of cinnamon sticks simmering on the stove at our abuelita’s house or the warm treat passed around at family gatherings. Adding pumpkin and warm spices doesn’t erase that memory—it updates it. The pumpkin puree adds an incredible richness and velvety texture that pairs beautifully with the traditional sweetened condensed milk, making it feel extra special for the holidays.
  • The Perfect Addition to Fall Traditions While traditional arroz con leche is a year-round staple, this version is practically made for October and November. It is an amazing, low-stress dessert to serve for Día de los Muertos or family gatherings. Plus, because it’s a quick one-pot recipe, you can easily whip it up on a crisp weekend to enjoy right after a carne asada, keeping the family warm as the weather cools down.

Ingredients You'll Need

White Rice: This is the absolute star and heart of the dish. By toasting the dry rice grains first with the whole spices, it locks in a deep, nutty background flavor. As it cooks and expands, it provides that essential, hearty bite that grounds the dessert in pure Mexican comfort food nostalgia

Milk: Cooking the rice directly in milk (instead of just water) infuses the grains with dairy from the inside out. This makes the rice tender and naturally sweet right from the start.

Cinnamon Sticks: Using whole sticks (canela) releases a smooth, woody, deeply nostalgic warmth that signals home to anyone who grew up eating traditional arroz con leche.

Cloves: They add a layer of complexity that balances out the intense sweetness of the milks.

Star Anise: This introduces a subtle, licorice-like herbal sweetness. In Mexican baking and traditional atolesor café de olla, star anise is a secret weapon that elevates simple dishes into something deeply aromatic and comforting.

Pumpkin Spice & Ground Cinnamon: These ground spices evenly coats the finished rice bringing that sharp, instant “cozy American autumn” punch.

Pumpkin Puree: The ultimate seasonal upgrade. It adds an earthy body that traditional arroz con leche doesn’t usually have.

Sweetened Condensed Milk: A staple in Mexican desserts, la lechera binds the sauce together, giving it that luxurious texture.

Whole Milk: This acts as the balancer. It thins out the heavy pumpkin puree and sticky condensed milk.

Vanilla Extract: Vanilla acts like salt in baking—it doesn’t just add flavor; it enhances everything else.

How to Make Pumpkin Arroz con Leche

Toast the Rice: In a medium stock pot, toast the rice with the cinnamon sticks, cloves, star anise, pumpkin spice, and ground cinnamon over medium heat. Shake the pan frequently so every grain touches the hot surface and the rice turns a light golden color without burning (about 5 minutes).

Boil and Simmer: Add the 2 cups of milk and 2 cups of water to the pot. Bring the liquid to a boil, then lower the heat to low and cover. Set a timer for 18 minutes.

Make the Sauce: While the rice cooks, thoroughly mix the pumpkin puree, sweetened condensed milk, whole milk, and vanilla extract in a bowl until smooth.

Fluff: Once the 18-minute timer goes off and the rice finishes steaming, remove the lid and let it cool for a few moments. Remove the whole spices (cinnamon sticks, cloves, star anise) if desired, and fluff the rice gently with a fork.

Combine: Pour the pumpkin spice leche mixture over the fluffy rice and fold everything together until every grain is coated in the creamy sauce.

How to Store Pumpkin Spice Arroz con Leche

Refrigerating (Best for 3–5 days)
  • Cool it completely: Let the arroz con leche come to room temperature before packing it away. If you seal it while hot, the trapped steam will create condensation, making the rice watery.
  • Use airtight containers: Store the pudding in a tightly sealed glass jar or plastic containers  to keep it from absorbing other fridge odors.
How to Reheat (The Golden Rule)
Rice continues to absorb liquid as it sits in the fridge. When you take this out the next day, it will likely look much thicker or more solid than when you first made it.
  • The Fix: Add a generous splash of whole milk, heavy cream, or evaporated milk right before heating.
  • Microwave: Heat in 30-second bursts, stirring in between, until hot and creamy.
  • Stovetop: Reheat over low heat in a small saucepan. Stir constantly and add milk as needed so the bottom doesn’t scorch.
Can You Freeze It? (Not Recommended)
While you technically can freeze arroz con leche for up to 2 months, the texture of the dairy and pumpkin puree will change during the thawing process. The rice grains tend to become grainy or mushy, and the milks can separate. It is highly recommended to enjoy this fresh from the fridge!
