Roasted poblano peppers steaming inside a clear glass container
Ever wonder how authentic Mexican restaurants get that deeply smoky, rich, and velvety flavor into their dishes? The secret isn’t a complicated spice blend—it’s the art of charring.

Whether you are looking to elevate your weeknight fajitas, blend up a luxurious cream sauce, or prep the ultimate base for cheesy chiles rellenos, learning how to roast poblano peppers is a total kitchen game-changer. In just 15 minutes, you can transform these mild, glossy green gems into tender, smoky flavor bombs. Today, I’m sharing the 4 methods to get that perfect char plus the foolproof “sweating” trick that makes peeling the skins a breeze. Let’s get roasting!

Why Should Poblano Peppers Be Roasted?

  • Improves texture and digestion: Roasting blisters the tough, fibrous, and hard-to-digest outer skin so it easily steams off, leaving behind a tender, buttery texture.
  • Enhances and deepens flavor: Heat transforms the mild, earthy, and crisp raw pepper into a rich, smoky, savory, and slightly sweet ingredient.
  • Tames the raw bite: The roasting process replaces the sharp, “green” taste of a raw pepper with a deep, complex warmth and a subtle, fruity undertone.

Ingredients You'll Need

Poblano Peppers. A raw poblano is crisp, earthy, and relatively mild. Once roasted, its flavor transforms completely. It becomes smoky, rich, slightly sweet, and savory with a deep, complex warmth. While they carry a very mild kick, roasting brings out a rich, almost fruity undertone that lacks the sharp “green” bite of a raw bell pepper.

4 Methods of Roasting Poblano Peppers

Oven Broiler Method (Best for Large Batches)

  1. Prep the oven: Set your oven broiler to high and place the top rack about 3 to 6 inches below the heat source.
  2. Arrange the peppers: Thoroughly wipe the peppers dry (excess water prevents good blistering). Place them in a single layer on a baking sheet.
  3. Broil: Slide the pan under the broiler for 4 to 5 minutes until the skin turns black, blisters, and bubbles. Flip the peppers over and broil for another 4 to 5 minutes on the other side.

Gas Stovetop or Grill Method

  1. Char directly: Turn a gas stove burner or grill on high. Place the clean, dry poblano peppers directly over the open flame.
  2. Rotate: Using metal tongs, rotate the peppers every 1 to 2 minutes. Ensure the skin on all sides becomes evenly charred and blistered.

Air Fryer Method

  1. Oil lightly: Rub the peppers with a very thin layer of avocado oil. This helps the skin blister evenly.
  2. Arrange: Place the peppers in the air fryer basket in a single layer. Do not overcrowd them.
  3. Air fry: Cook at 400°F (200°C) for 10 to 12 minutes. Flip them over around the 5-minute mark. They are done when the skin is blackened and blistered all over.

How to Steam and Peel Poblano Peppers

Immediately transfer the hot, blackened peppers into an airtight environment to let them sweat:

The Bowl Method: Place the hot peppers in a heat-safe glass or metal bowl and cover tightly with plastic wrap or a fitted lid.

The Bag Method: Alternatively, place the hot peppers straight into a sealed plastic zip-top bag or wrap them in a clean kitchen towel.

Let them sit for 10 to 15 minutes. The trapped heat will generate steam, softening the flesh and separating the transparent skin from the pepper.

Peel
Once the peppers are cool enough to handle, gently rub off the charred skin using your fingers, a butter knife, or a paper towel. Do not rinse the peppers under water to remove the skin, as this washes away the rich, smoky oils and flavor.
