Authentic Mexican Street Corn

Authentic Mexican Street Corn is made with mayo, crema, chili powder, lime juice and hot sauce.

Ingredients
  

  • 8 Corn
  • 1/2 cup Mayo
  • 1 container Mexican Crema
  • 6 Limes juiced
  • 3 cups Cotija Cheese
  • 1 shaker Tajin chili powder
  • 1 bottle Valentina Hot Sauce

Instructions
 

  • To grill your street corn for a beautiful charr, start by peeling some of the corn husks away from the corn. Leave the first layer of husks as protection from the flames. Don't remove all the husks, the husks will act as a barrier between the flame and the kernels and leave a nice variety of flavor and charr.
  • Set your desired amount of corn on the grill and leave them 3-4 minutes on each side. Flame should be at a controlled medium.
  • After rotating your corn 4-5 times, the corn should be perfectly cooked with some charred edges. Take corn off the grill and set aside to cool.
  • Once cooled, peel back the husks and layer on toppings.
  • I like to start with lime juice.
